Conch [pronounced ‘KONK'] also known as lambie or sea snail is a large mollusk and popular type of seafood found in the Caribbean.
Once removed from the shell, conch meat is rather tough and needs to be tenderized by pounding it before it is cooked.
Conch is an endangered species in many parts of the Caribbean although is plentiful in the Bahamas where conch fritters – cracked conch – are favorite menu items. Fishermen who specialize in diving for lambie do so between January to May.
A conch or lambie shell, which sounds like a fog horn, is blown by fishermen announce that they have returned from the sea with fresh fish for sale or to celebrate a run at a cricket match.
